Vietnamese-style turkey rolls

Ingredients
  • 1 long French stick (baguette), ends trimmed
  • 1/3 cup whole-egg mayonnaise
  • 2 cups shredded iceberg lettuce
  • 8 slices Ingham Oven Roasted Turkey Breast Half
  • 1 large carrot, peeled, cut into matchsticks
  • 1 small telegraph (continental) cucumber, deseeded, cut into matchsticks
  • 1/3 cup sweet chilli sauce
  • 1/2 cup fresh coriander leaves
  • 1/4 cup fresh mint leaves
  • 1 long red chilli, thinly sliced (optional)
Method
  1. Cut French stick in half crossways (don't cut all the way through). Spread base with mayonnaise. Top with lettuce, turkey, carrot and cucumber. Drizzle with chilli sauce, then top with coriander and mint, and fresh chilli, if desired. Cut French stick into 4 even lengths. Serve.
